Breakfast Calzone

My first recipe post!!!
Okay, so I've had several requests for this recipe. An easy breakfast calzone... Basically a breakfast casserole in a pastry wrap. This recipe has a lot of protein which is great for the start of a long day! Best of all, this baby can feel 4 people! Of course, keep in mind that you can substitute the veggies for your favorite kind!


Ingredients:
-1 Pilsbury pizza dough in the can (look for whole wheat!)
-4 eggs
-3/4 c. egg whites
-2 tbsp. plain greek yogurt
-1/2 tsp. olive oil
-1/4 c. bell pepper
-1/4 c. onion
-1/4 c. mushroom
-1/4 c. spinach
-3 strips turkey (or regular) bacon
-2 tbsp. parsley
-1/2 c. shredded cheese of your choice (I use Mexican)
-salt and pepper to taste

Directions:
-Preheat oven to temperature indicated on dough can
-roll out dough onto pizza stone/cookie sheet
-whisk together eggs, egg whites, greek yogurt, parsley, salt, and pepper
-heat a large skillet over med.-high heat with olive oil
-dice veggies (except spinach) and satay in skillet
-once the onions are translucent, add egg mixture to the skillet and "scramble" with veggies
-once it is cooked firm (like scrambled eggs) pull off of the burner and fold in cheese and      chopped spinach
-place the mixture into the middle of one half of the rolled out dough
-fold the other half over and crease seams with a fork
-use the remaining egg from your bowl to rub over the top of the pastry
-bake until pastry is golden
